Founded by Philippe Pautesta-Herder and shaped In partnership with Xcel Padel and in collaboration with Chef Jimmy Chill, Olea & Bloom was created from a shared passion for padel, food, and the Mediterranean art of living well.

Philippe’s hospitality expertise meets Jimmy’s creative, ingredient-driven approach to cooking in a concept that brings people together from morning coffees and work sessions to post-match meals and sunset drinks.

Founder | Visionary in Hospitality | Creator of Gastro Padel

With 25+ years of international hospitality experience, Philippe has built a reputation for crafting environments where excellence, creativity, and community thrive — from La Maison d’Adeline in Provence to managing Balthazar in New York.

In 2006, he founded PHP Enterprises, consulting for The Webster, Caviar Kaspia, and The South Beach Group.
In 2012, he launched Le Food Catering, Miami’s premier film-set caterer.

At Olea & Bloom, Philippe unites gastronomy, wellness, and community under the philosophy of Gastro Padel.

Chef Jimmy brings over a decade of culinary and hospitality experience across Israel, Morocco, and the U.S. Rooted in Galilean Arab heritage and refined through leading acclaimed restaurants, his cuisine embodies generosity, storytelling, and bold simplicity.
