Philippe Pautesta-Herder

Founder | Visionary in Hospitality | Creator of Gastro Padel

Philippe Pautesta-Herder is a hospitality entrepreneur redefining how luxury, sport, and community connect.

With more than 25 years of international experience, he has built a reputation for crafting environments where excellence, creativity, and connection thrive.

From his early days at his family’s restaurant, La Maison d’Adeline in Provence, to managing iconic New York venues such as Balthazar, Philippe’s journey reflects mastery in service, operations, and design.

In 2006 he founded PHP Enterprises, a boutique hospitality consulting firm behind projects with The Webster, Caviar Kaspia, Dupoux Design, and The South Beach Group.
In 2012 he launched Le Food Catering, Miami’s premier photo-shoot and film-set caterer, celebrated for its precision and creativity.

Executive Chef & Culinary Director | 

The creative force behind Olea & Bloom’s Mediterranean soul, Chef Jimmy Chill brings over a decade of global culinary experience spanning Israel, Morocco, and the United States.
Rooted in his Galilean heritage and inspired by modern techniques, Jimmy creates cuisine that fuses authentic tradition with contemporary artistry.

His passion began in Layla’s kitchen, his mother’s, where he learned to cook with seasonal ingredients and heart.
Since then, he has crafted unforgettable dining experiences — from leading restaurant concepts to blind dinners and intimate events to large-scale celebrations — always designed to connect people through food.
Featured in international culinary competitions and TV productions, Jimmy is known for his visionary creativity, charisma, and storytelling through flavor.

At Olea & Bloom, Chef Jimmy curates menus that embody the essence of Gastro Padel — vibrant, social, and made to share.
